FIELD: food-processing industry, in particular, production of water-in-oil type emulsions such as mayonnaise.
SUBSTANCE: method involves mixing components for producing of mixture with oil content of 55-75%; pumping said mixture under pressure of at least 100 bar through pipe comprising at least one plate positioned transverse to said pipe and equipped with at least one opening, with ratio of pipe diameter to opening effective diameter making at least 5. Water-in-oil emulsion produced by said method is food product similar to mayonnaise and includes oil or fat in an amount of 55-75%, emulsifier in an amount of up to 10%, edible acid and water having viscosity of 5-40 Pa.s.
EFFECT: improved quality and wider range of emulsion type food products, and simplified process for preparing of such food products.
