FIELD: processing of raw food materials, in particular, equipment used in lines for producing of fried coffee, chicory and other cereals in food-concentrates industry.

SUBSTANCE: frying apparatus has casing with charging and discharge devices, heat-carrier feeding branch pipe, heat-carrier discharge branch pipe, and working chamber incorporating rectangular form and moistening nozzles. Rectangular form is made integral with casing. Two drawer-type boxes are positioned within rectangular form for reciprocation by means of endless cable conveyor. Upper run of conveyor is attached to outer wall of one drawer-type box and lower run of conveyor is attached to outer wall of other drawer-type box. Each box has bottom defined by netted members adapted for longitudinal movement independently of box. Bottom of rectangular form is defined by perforated net positioned for reversing movement in transverse direction and equipped with rectangular product discharge opening. Charging device is made in the form of hopper with dosing unit movable in horizontal plane along guides above working chamber. Apparatus of such construction allows predetermined heat-and-moisture mode to be stable throughout the entire process.

EFFECT: intensified frying process, wider range of fields where such apparatus may be used, and improved quality of ready product.
