FIELD: food-processing industry, in particular, cereal and food concentrates industry. SUBSTANCE: frying apparatus has charging and discharge devices, working chamber incorporating chain conveyor and perforated tube positioned in moistening zone. Working chamber has succession of frying and moistening zones, through which rectangular forms are moved by chain conveyor. Form bottoms and two opposite side walls are made perforated. Each side wall is attached to pin positioned in pipe and provided with slots. Rotary bars are additionally located in moistening zone and provided with projections, which are in contact with pin slots. Such construction allows heat and moisture mode to be stabilized through the entire frying process. Apparatus may be used for producing fried coffee, chicory and other fry cereals. EFFECT: intensified frying process and improved quality of ready product. 3 dwg
