FIELD: food products; engines and pumps.
SUBSTANCE: there are transporters with rectangular moulds with perforated bottoms and perforated pipe in humidity zone, loading and unloading devices in rotary frying apparatus. Rectangular moulds with motion dwell move cyclical in full-circle direction with the help of transmission shaft on guide way through eight zones: loading zone, first frying zone, first humidity zone, second frying zone, second humidity zone, third frying zone, laying zone and unloading zone. At that under each frying zone nipple for heat supplier input is located, above it fume hoods for removing of waste heat supplier and coal gas are located. There are perforated pipes with nipples for thin disperse spraying of feed water above each humidity zone. Mould bottom is made with movable perforated net with four rollers. Rod with rollers is fixed to the net, which contacts with former, installed under unloading zone.
EFFECT: stabilisation of heat and humidity regime during the whole process and quality improvement of prepared product.
