SUBSTANCE: claimed method includes biochemical assay of gluten to determine content of α, β, γ, and ω-glyadines therein and to determine ratio of α+β/γ+ω-glyadines, and when said ratio is less than 1, grain has status of strong wheat, and when is more than 1 grain has status of weak wheat.
EFFECT: new method for determination of wheal grain status.
