FIELD: milk industry.
SUBSTANCE: method involves producing lactose-free milk base from dried fat-free goat milk having moisture content of 12-16% by extracting lactose and mineral salts using aqueous solution of hydrochloric acid or citric acid or acid whey with pH value of 3.8-4.4 of said mixture within temperature range of 20-55 C, with ratio of dried fat-free milk to acid solution making 1:8-1:12; separating extract; introducing into lactose-free base fatty component in the form of ethyl alcohol solution so that fatty component content in ethyl alcohol is 8-16%; mixing mixture and drying in convective drier until residual moisture content is 5-6%; adding fine crystalline sugar, water-soluble vitamins in dry state and selenides and iodides of sodium and potassium in an amount of 100-120 mkg/kg and 2.0-2.4 mk/kg; mixing said mixture; adding flour for infant's and dietary food and ferric glycerophosphate; introducing sodium citrate or potassium citrate or bicarbonate of soda in an amount of 8-10 g/kg, 10-12 g/kg and 6-8 g/kg, respectively; mixing resultant mixture and packaging in the presence of inert gas medium.
EFFECT: increased biological value and digestibility of product.
