FIELD: dairy industry. SUBSTANCE: fat-free milk is chemically treated with potassium and sodium citrates and concentrated up to mass parts of dry substances 35-45% after pasteurization of milk and its separation into two parts in amount 15-20% and 80-85% of volume of concentrated milk. Milk-fat fraction is prepared from the first part. It is pasteurized after homogenization and two parts are mixed at temperature 55-65 C. In mixture are added carbohydrate components, 3-7-% aqueous solution of edible albumin with cryopowder of drug plant and corn starch, 28-32-% aqueous solution of whey protein concentrate treated with potassium and sodium citrates. Ratio of edible albumin and whey protein concentrate is 1:10-1:12. Water-soluble vitamins, mineral salts and food color are introduced in mixture and it is homogenized. After drying, mixture is mixed with extruded wheat bran in amount of 0.5-2.0 mas.% of dry mixture. EFFECT: higher efficiency.
