FIELD: milk industry.
SUBSTANCE: method involves normalizing milk as to fat content and weight part of protein; cleaning; introducing natural quail egg mélange into normalized mixture in an amount of 0.2-10% by weight of product or quail egg dried powder in an amount of 0.1-5% by weight of product, and beta-carotene in an amount of 7 g, 100% of solution per 1 t of mixture; mixing, homogenizing, pasteurizing, cooling and pouring mixture. Method allows pasteurization taste to be imparted to product.
EFFECT: increased nutrient and biological value of product.
