FIELD: fish industry, in particular, production of salted fish foods, salted semi-finished fish products for obtaining of cured and smoked fish foods.
SUBSTANCE: method involves providing primary processing of raw material and injection, followed by final salting. Primary processing of raw material is performed using anolyte with pH value of 2.0-2.2. Injection is performed using saturated activated saline solution having pH value of 9.8-10.0. Final salting process is performed by dipping into saturated activated saline solution based on catholyte having pH value of 11.0-11.2. Anolyte and catholyte are produced by providing electric processing of sweet tap water in anode and cathode chambers of diaphragm-type electrolyzer.
EFFECT: reduced salting time and improved salting quality provided by uniform distribution of salt in product.
