FIELD: oil and fat industry.
SUBSTANCE: method involves mixing non-refining high-oleic sunflower oil with a hydrating agent, exposition of prepared mixture, separation of mixture for hydrated oil and phospholipid emulsion, drying hydrated oil and drying phospholipid emulsion to yield nutrient phospholipids. Monosubstituted sodium citrate aqueous solution in the concentration 1.0-4.0% treated preliminary in alternating electromagnetic field at magnetic induction value 0.1-0.4 Tl at temperature 30-50°C is used as a hydrating agent. Invention provides improving indices of quality if hydrated oil and nutrient phospholipids prepared.
EFFECT: improved method of hydration.
