FIELD: fat-and-oil industry. SUBSTANCE: method includes mixing, at temperature 35-60 C, non- refined vegetable oil with hydration agent in zone of electromagnetic field (magnetic induction 0.6-0.9 Tl) rotating at rotation frequency 50 s-1, treating resulting mixture in constant electromagnetic field (magnetic induction 0.3-0.5 Tl), exposing mixture, separating it into hydrated oil and phospholipid emulsion, and drying the two latter. Aqueous solution of citric acid with concentration 2.5 to 7.0% is used as hydration agent in quantity 2.5 to 6.0% of the weight of oil. EFFECT: improved quality of hydrated oil and food phospholipids. 3 tbl, 3 ex
