FIELD: homogenization and preservation of liquids such as milk, may be used in chemical, food-processing and other branches of industry.

SUBSTANCE: method involves providing vortex axial subcavitational flow mode in vortex pipe by tangential feeding of liquid at flow rate of 70 m/s; creating core of subcavitational vortex flow of liquid to be homogenized in vortex pipe, said flow running symmetrically to and along axis, so that sublimation process and embrittling of liquid particles under homogenization process occur apart from liquid cavitational process, said particles being readily destructed upon colliding to enhance homogenization process. Length of subcavitational core created in vortex pipe is equal to length of vortex pipe, and diameter of core is restricted by pressure zone, with value of said pressure being less than 610.6 Pa. Flow runs in vortex pipe along path of axially extending coiling-uncoiling spiral providing 20-30 fold getting of each particle of liquid under homogenization process into subcavitational core zone. Apparatus has cylindrical, conical or combined vortex pipe with continuous end wall and inlet nozzle disposed tangentially to inner surface of vortex pipe, and outlet diaphragm connected to converging tube making continuation of diffuser. Diameter of inlet opening is 2-10 times smaller than diameter of continuous end wall, length of vortex pipe is 10-30 times greater than diameter of continuous end wall, and inner diameter of diaphragm is 2-10 times smaller than diameter of continuous end wall.

EFFECT: increased homogenization extent, reduced growing of microflora and decreased consumption of power.
