FIELD: biotechnology.
SUBSTANCE: invention relates to method for producing the grain mycelium of edible higher fungi. Dry grains are placed into large volume capacities (up to 50 l), for example, into propylene-made bags and capacities with grains are placed in capacities filled with water. Grains are wetted for 24 h for seedling spores of higher fungi. Water from capacities is poured off and placed into autoclave for sterilization under pressure 1-1.5 atm for 30 min - 1 h depending on volume of sterilizing grains that is determined by experimental way. After sterilization grains are cooled to temperature that doesn't damage the sowing mother mycelium. Then the association of mother mycelium of higher cultured fungus and fungus Geotrichum candidum in grains wherein the latter fungus represents antagonist of lower mold fungi and inhibits their development and propagation but doesn't compete with higher fungus mycelium developing in grains. After the association sowing capacities are incubated in thermostat at temperature 24-26°C or at room temperature in shelves. In 3-5 days capacities with germinated mycelium is shaken to prevent gluing grains and for activation of the mycelium growth. The final readiness of mycelium is determined visually.
