FIELD: food production technology.
SUBSTANCE: tinned food is made by cutting, blanching and mincing onions, parsley root, cucumbers and radish, freezing and mincing spring onions and dill, boiling kvass, mincing filleted pike, mixing the listed ingredients with sour cream, fish broth, salt and СО2-biomass extract of the specified micromicet type, hot black pepper and laurel, packing the mixture in aluminum tubes, pressurization and sterilization.
EFFECT: tinned food has enhanced digestibility.
