FIELD: chemistry; process procedures.
SUBSTANCE: during mashing, aqueous solution of hydrogen peroxide in specified concentration is added to mash. Hydrogen peroxide in amount of 0.07-0.1% (vol.) from the volume mashed is added to mash during mashing at the lower temperature limit of conversion, while catalase in volumetric ratio 1:3 in relation to hydrogen peroxide is added to mash, when temperature of the latter reaches 45°С.
EFFECT: increase in ethanol yield.
