FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the flour and cereals industry. A method for obtaining amaranth flakes with a high protein and squalene content from amaranth grain is proposed, in which, in the process of obtaining flakes, a single pass of amaranth grain is carried out through the grinding process system in the form of roller machines, while the amaranth grain is pre-moistened to a moisture content of 12-13% before the grinding system , sedated for 2 hours, after which the prepared amaranth grain is flattened on roller machines with smooth microrough rollers at a speed of rotation of a fast roller of 5.0 m / s, with a ratio of peripheral speeds of fast and slow rotating rollers of 1.25, followed by sorting the product of grinding amaranth grain on sieves of various sizes, amaranth flakes are obtained from a polyamide sieve № 8.7 PA-300 with a nominal opening size of 850 micrometers (mcm).
EFFECT: invention consists in the development of an effective technology for processing amaranth grain to obtain amaranth flakes with a high protein and squalene content and expanding the range of raw materials for food concentrate, bakery and confectionery production.
