FIELD: organic chemistry, beer.
SUBSTANCE: method implies production of must at the first stage by mixing of brewing water, hop and carbohydrate source. At the second stage must is boiled and at the third stage must is fermented, before, during and after fermentation mixture is added with palatinose-containing composition or palatinose. For fermentation at least one microorganism is selected from group consisting of Saccharomyces diastaticus. Carbohydrate source is used as malted cereals or non-malted materials plus malted cereals. Freshener similar to beer is produced, at that it is light or dark beer or freshener similar to beer. Beer cocktail contains herbal component, flavoring substances, caffeine, colouring agents, food acids, acids and/or fruits, as well as low-alcohol or alcohol-free beer or freshener similar to beer produced by method described in p.1, and sugar component containing saccharose or low-alcohol or alcohol-free beer or freshener similar to beer produced by method described in p.1, and palatinose or admixture containing palatinose. Functional freshener similar to beer, containing microorganisms and palatinose. It enables to simplify production process of low-alcohol or alcohol-free beer with keeping of properties proper to natural beer.
EFFECT: simplification of production process of low-alcohol or alcohol-free beer with keeping of properties proper to natural beer.
