FIELD: food-processing industry.
SUBSTANCE: invention concerns area of the food, microbiological and chemical industry and can be used for vacuum freeze drying of the frozen solutions or suspensions, vacuum freeze drying of the frozen foodstuff, and also for concentrating or drying of slurries and suspensions. Adjoining with baking trays walls of heating/cooling plates are executed with possibility of deformation under the influence of pressure difference between internal medium of plates and atmosphere of a vacuum drying cupboard, and heat-transmitting baking trays, placed between plates, have the hyper-rigidity interfering superfluous deformation of plate walls under the influence of operating pressure difference; heating/cooling plates are preferably located vertically, the loading door is located in face or in ceiling zone of a vacuum drying cupboard.
EFFECT: increase of working volume filling degree of a vacuum drying cupboard by baking trays with drying material; improvement of thermal contact of baking trays with heating/cooling plates; process automation of loading and unloading in a vacuum drying cupboard.
