FIELD: food industry.
SUBSTANCE: invention relates to food industry. According to the proposed method one performs rectification division of a solution of water in low boiling liquid hydrophilous agent into a vapour fraction enriched with the agent and a liquid fraction enriched with water; the liquid fraction is discharged from the installation. The vapour fraction is heated and passed through a layer of the frozen product being dried. One condenses the vapour fraction; then the condensed solution of water in the low boiling liquid hydrophilous agent is delivered for rectification division. One also proposes an installation for vacuum sublimation drying containing a vacuum pump, one or several drying chambers wherein the frozen product being dried is placed, one or several calorifiers, a rectification column with a boiler and dephlegmator and a condenser forming a common hermetically sealed system.
EFFECT: group of inventions ensures reduced drying time.
