FIELD: chemistry.
SUBSTANCE: invention pertains to the food industry, and particularly to the method of evaluating the biological value of anthocyan dyes. The method involves preparing an alcohol solution of the analysed dye 1-4 mcl of the obtained solution is placed on the starting line of a chromatographic sheet with a layer of silica gel. After the sample has dried, ascending chromatography is carried out in a system of the following solvents: n-amyl alcohol-acetic acid-water, taken in a ratio of 2:1:1. The sheet is dried, treated with a 1% solution of aluminium chloride in ethanol and examined in UV-light. Evaluation of biological value of the dye is done on the presence of flavonoids in it, found on the zones fluorescent in UV-light.
EFFECT: invention allows increasing sensitivity of the method.
