COMPOSITION FOR ENRICHMENT OF CONSUMABLE PRODUCTS WITH LONG STORAGE TIME AND METHOD OF ITS MANUFACTURING Russian patent published in 2008 - IPC A23L1/29 A61K35/74

Abstract RU 2329668 C2

FIELD: food products.

SUBSTANCE: invention can be used as universal enriching agent with useful and live bacteria which benefit human stomach microbiocenosis and prevent different diseases when a person consumes instant products with long storage time. Composition for enrichment of consumable products with long storage time contains probiotic strains Enterococcus faecium L-3, Lactobacillus casei subsp. casei "ВКПМ В-8816" (Russian National Collection of Industrial Microorganisms), Bifidobacterium bifidum "ВКПМ АС - 1248", from lactic streptococci - Lactococcus lactis subsp. Cremoris. Dry biomass content of each of mentioned strains accounts for 5-15 mass%, and base of consumable product - cereal flakes - accounts for 85-95 mass%. Composition manufacturing involves adding grown biomass of probiotic strains to consumable product base and additional incubating directly on the consumable product base during 24-48 hours. The obtained biomass is dried down to humidity of 8-12% at most. The invention ensures maximum content of live bacteria survived when poured with hot water and benefiting human organism. The consumable products acquire probiotic properties along with the properties that are common to a consumer.

EFFECT: manufacturing of a product with long storage time and with probiotic properties.
