FIELD: food industry.
SUBSTANCE: in order to cook preserved food, potatoes are cut and blanched. Lettuce, green onions and potherbs are cut and frozen. Calamari fillet is cut. Specified components are mixed without oxygen access with table salt, calcium acetate and black bitter pepper. Prepared mixture and mayonnaise are packed, sealed and sterilised.
EFFECT: preparation of preserved food with high assimilability.
