FIELD: technology of food products making.
SUBSTANCE: recipe components are prepared. Hen's eggs are boiled, peeled and cut. Garlic is blanched and riced. Lettuce is cut and frozen. Calamaries are cut, and walnuts are crushed. Specified components are mixed without oxygen access with capers, lemon juice, table salt, calcium acetate, mustard and black bitter pepper. Also vegetable oil and mayonnaise are mixed. Then prepared mixtures are packed, sealed and sterilised.
EFFECT: expansion of arsenal of technical facilities and dishes for new preserved food production.
