FIELD: chemistry, food industry.
SUBSTANCE: invention relates to sugar industry. The method includes processing sugar beet roots with solution of surface-active substance by dispersion before their shredding into chips. Processed roots are shred into chips heated to 75-82°C by diffused juice and extraction is carried out. As surface-active solution, water solution of preparation Laprol PS-1 with temperature of 20-22°C in amount of 0.0007-0.001% to beet weight is used. Solution is made by diluting preparation in water with ratio of 1:2-1:3.
EFFECT: increase in sucrose diffusion index, reduction of extraction duration and higher purity of diffused juice.
