FIELD: food industry.
SUBSTANCE: method for extraction of sucrose from beet chips includes chipping beetroot and exposure to electromagnet field. Beet chips are exposed continuously for the whole process of its diffusion to cyclic electromagnet field with frequency of not more than 100 Hz and induction from 10 to 100 microtesla. Beet chips are sent into diffuser for diffusion by means of device for supply, over which electromagnet coil is installed, to which electric signal is supplied from generator.
EFFECT: invention makes it possible to increase amount of sucrose extracted in process of diffusion from beet chips, to improve purity of diffusion juice, to reduce sugar losses in press.
