FIELD: beet-sugar production. SUBSTANCE: method for production of diffusion juice from sugar beet includes grinding sugar beet into cuttings, electroactivation of solution of sulfate or chloride of polivalent metal salts with its concentration of 0.0001-0.003% of beet mass and solution amounting to 20-30% of beet mass, in diaphragm electrolyzer having cathode chamber separated by partition into two parts, and anodic chamber. Electroactivation of solution in one part of cathode chamber is conducted up to attaining catholyte pH 5.0-5.5 and redox potential from minus 800 to minus 1100 mV, and in the other part of chamber, up to attaining pH 5.6-6.0 and redox potential from minus 1100 to minus 1250 mV. Saturated steam from the latter catholite is produced with temperature of 100-102 C and pressure of 0.101-0.109 MPa. Beet cuttings are scalded with mixture of catholite from the first part of cathode chamber and produced saturated steam in the amount of 10-15% of beet mass. Prior to extraction of beet cuttings, beet pulp water is electroactivated in anode chamber-electrolyzer up to attaining anolyte pH 5.0-6.0 and redox potential of 750-900 mV and it is used in extraction process in the amount of 30-45% of beet mass.
