SUBSTANCE: invention refers to production processes and can be used in flour-milling, baking and confectionery industry to improve baking properties of flour made of low class grain. Cereal scalpings are used to produce extract containing abscisic acid and inhibiting complex which consists of organic nonprotein natural inhibitors. Extract is applied to flour or leavened dough or grain at binning.
EFFECT: higher flour or grain drop index by inhibiting activity of flour or grain α- amylase.
