FIELD: food products, mechanics.

SUBSTANCE: method of process control in manufacturing puree-like concentrates implies crushing and mechanic pressing of raw feedstock with discharge of liquid fraction, boiling out the crushed fraction, its forming and obtaining end product in the form of puree-like concentrate. The raw feedstock is crushed in a screw press and the crushed fraction is boiled out in vacuum-evaporating apparatus with constant stirring by anchor stirrer. Casing of the vacuum-evaporating apparatus is heated by the steam produced in a steam generator with electric heating elements and pressure relief valve. The condensate produced is removed into steam condensate collector and then supplied to the steam generator and vacuum-evaporating apparatus so that to operate in closed cycle. The raw feedstock consumption and moisture content, liquid fraction consumption, steam consumption, the puree-like concentrate consumption and moisture content, consumption of additives introduced to the vacuum-evaporating apparatus, temperature of boiling out the crushed fraction and pressure in the vacuum-evaporating apparatus, rotation speed of the press screw and anchor stirrer, steam pressure and liquid level in the steam generator are measured. Rotation speed of the press screw is set according to the raw feedstock consumption and moisture content. Consumption of raw feedstock and liquid fraction help specifying consumption of the crushed fraction which is used to set quantity of additives introduced to the vacuum-evaporating apparatus, pressure in the vacuum-evaporating apparatus by regulating rotation speed of vacuum pump and temperature of boiling out the crushed fraction by regulating steam consumption. In case of the increased crushed fraction moisture content anchor stirrer rotation speed is scaled up to the maximum limit, pressure in the vacuum-evaporating apparatus is scaled down to the minimum limit and then temperature of boiling out the crushed fraction is regulated by controlling steam consumption till moisture content of the boiled fraction reaches the specified value. In case of the decreased crushed fraction moisture content anchor stirrer rotation speed is scaled down to the minimum limit, pressure in the vacuum-evaporating apparatus is scaled up to the maximum limit and then temperature of boiling out the crushed fraction is regulated by controlling steam consumption till moisture content of the boiled fraction reaches the specified value. Steam pressure in the steam generator is used to set specified steam generator capacity by regulating power of electric heating elements; in case level of condensate in the steam generator falls below the specified value condensate from the condensate collector is supplied and in case steam pressure in the steam generator reaches its maximum limit the pressure is released through the pressure relief valve.

EFFECT: invention allows improving quality of end products, reducing material and energy costs per end product weight unit, increasing accuracy and reliability of control over technological parameters at all stages of manufacturing puree-like concentrate and increasing output.
