FIELD: food industry.

SUBSTANCE: invention relates to food industry and can be used for automation of technological processes of treatment of green plant vegetative mass. Method comprising squeezing the preliminarily milled mass of protein-containing green plants in a screw press to produce herbal squeezer and green juice, delivered in a filter for filtration, after that the solid fraction, i.e. precipitate from the filter, is mixed with the herbal squeezer, and the purified green juice is heated in a heater and fed into a microfiltration module unit for fine purification. Formed precipitate is also mixed with the herbal squeezer, and the obtained filtrate is delivered into the vessel with further feeding into an ultrafiltration module unit for concentration to obtain required dry substances content equal to 25...35 %. Concentrated filtrate is discharged into a vessel for concentrate with simultaneous introducing antioxidant solution into said vessel. If necessary, the microfiltration module units and ultrafiltration module units are regenerated. Obtained concentrate is dried in a spray drier by heated atmospheric air, and a powdery protein concentrate is obtained. Spray drier exhaust air is purified in a cyclone-cleaner from the fine fraction, which is then mixed with the powdery protein concentrate.

EFFECT: use of the invention enables higher quality of finished product.
