FIELD: food industry.
SUBSTANCE: The invention relates to food industry. The method for moisture removal from phospholipid emulsion of vegetable oils in the rotational lever apparatus includes the application of starting moist phospholipid emulsion of vegetable oils by the blades of the rotor to the inner surface of the device's casing. The casing is heated by steam through mantle pipes. Then the phospholipid emulsion is moved along the casing in the form of the thin flim, then moisture is removed through evaporation and the resulting product - dried phospholipid emulsion of vegetable oils - is removed from the apparatus. The steam-gas-fat mixture produced during evaporation is extracted through a vacuum system and the liquid fraction of the product is extracted from the mixture by the separator.
EFFECT: improved the product quality and prevented product loss during moisture removal.
