SUBSTANCE: innovation in the device for concentrated fruit and vegetable puree containing a vertical double-wall cylinder-conic body connected with vacuum pump is that there is a delivery nozzle connected with feed pipe and injection nozzle for charging raw product. There is a tape helix installed between the walls of the double-wall cylinder-conic body. There is a cylindrical accumulator chamber attached to the lower part of the body by means of pipelines with sluice locks with radially positioned evaporator chambers representing a cylindrical body equipped with a steam jacket. Inside the cylindrical body there is a combined blade agitator installed and on its upper lid there are branch pipes for connection with the vacuum pump and on the lower lid there is an unloading branch pipe with a tap.

EFFECT: invention enables to intensify evaporation, improve quality of the finished product and increase productivity.
