FIELD: food industry.

SUBSTANCE: invention relates to sugar industry. The installation comprises lime slaking device with a casing fitted with lime dosing unit, water supplying unit, unit for mixing water and quicklime, tube for withdrawing gases and limewater as well as filtering device for separating unslaked particles from limewater. Mixing unit is made as a screw which is horizontally mounted in the casing and flights of which are recessed to transport lime paste produced by slaking to the discharge zone. The filtering device comprises vertically mounted tank connected with lime slaking device casing and fitted with horizontal screen in it for separation of unslaked particles from lime paste. Collector for supplying diffusion juice to dilute the lime paste and blades for removing unslaked particles off the screen surface are placed above the screen. Blade mixer for mixing the obtained and filtered through the screen limewater is placed under the screen. The invention ensures reducing water consumption needed for the production of limewater and improving its quality.
