SUBSTANCE: invention relates to apparatuses for food industry, namely to technique and equipment for concentrating liquid and producing dry food products by evaporation and vacuum drying and can be used at small-scale enterprises and farms without steam supply. Method of vacuum moisture elimination from agricultural raw material involves evacuation (10-1) Pa, heating raw material, removing and condensing moisture as well as stirring raw material; the raw material is preheated under the atmospheric pressure up to the temperature exceeding the boiling temperature in the established mode of free moisture elimination. The invention allows increasing the process productivity due to suppression of foam formation during raw material heating.
