FIELD: food industry.

SUBSTANCE: invention relates to food industry, namely to fluid food products concentration technology and dry food products manufacturing by its evaporation and drying in vacuum and can be used on minor and farming enterprises without vapor supply. Dehydration method of fluid agricultural raw materials in vacuum includes creation of exhaustion (10-1) Pa, warming up, dehydration and moisture condensation and raw materials mixing. Raw materials are warmed up in the expander at atmosphere pressure with mixing till 50°C and simultaneously exhaustion is created in condensate receiver, after that expander is connected to condensate receiver, exhaustion is created in the system. Expander is detached from condensate receiver when exhaustion is stabilised, stronger exhaustion is created in the receiver, raw materials are kept in vacuum till vapour and raw materials temperatures align. After that expander is connected to condensate receiver, turned on and off. Thus foam level in expander is controlled before the condensation starts. After beginning of condensation warming is turned on and preset evaporation mode is provided.

EFFECT: invention raises productiveness at the expense suppressing foam formation on raw materials warming stage.
