FIELD: food industry.
SUBSTANCE: method of preparation of the sugar solution which contains flowering material includes collection of fresh flowering material, crushing of this material and its injection into food sugar solution. After that pasteurisation is done by means of thermal processing during 10-20 minutes and fast cooling up to the temperature of 10-0°C. Also it is offered to use food sugar solution with flowering material and confectionary produced by means of use of this solution.
EFFECT: ensures to use natural flowering material as odorants and coloring agents during confectionery production.
