FIELD: food production process.
SUBSTANCE: protein lupine blend is mixed with oil, water and chitosan taken in the amount up to 10 wt %. Then the obtained mixture is homogenised during 2-5 min.
EFFECT: improved functional and processing characteristics of protein semiproduct, increased detoxification capability and expanded scope of application.
