FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used in dairy, meat, bakery, confectionary and fat-and-oil industry. Amaranth seeds are soaked in water during 6-10 hours at a temperature of 15-22°C. The water temperature is 50-70°C. The seeds are fed into a machano-acoustic homogeniser with acoustic field intensity equal to 100-500 Wt/kg. One performs treatment with simultaneous milling, stirring, homogenisation and pasteurisation. Pasteurisation is performed at a temperature of 92-98°C with maintenance during 3-5 minutes. Vegetable oil (soya, maize or other) may be additionally introduced into the concentrate in an amount of 10-11%. The end product represents a paste-like concentrate containing dry substances in an amount of 25-40%.
EFFECT: invention enables production of a product with enhanced nutritive and biological value, high emulsifying properties, an appealing light-yellow colour and no characteristic savour or odour.
