FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to production of food products imitating natural granulated fish caviar. The method envisages preparation of a primary mixture for granules formation that contains a protein component, sodium alginate and flavouring and colouring agents at a specific ratio. Then one proceeds with granule formation in calcium chloride solution and the granules maintenance in chitosan solution. Produced granules are separated from the receiving medium, washed and packaged.
EFFECT: invention enables production of food granulated caviar analogue structure and consistence whereof are characteristic of natural granulated caviar.
