FIELD: chemistry.
SUBSTANCE: present invention pertains to the starch industry. The method involves the following. To the initial glucose-fructose syrup with 30-80% content of dry substance, isopropanol is added in quantity of 50-500% mass of syrup. The mixture is stirred at 20-60°C, cooled to 0-5°C, and settled for 24-72 hours until crystallisation. The formed crystals are separated from the liquid fraction, dried and dissolved in water until 35-85% content of dry substance. As a result, syrup is obtained from the crystalline fraction, containing 1.0-20% fructose to the mass of dry substance. The liquid fraction is boiled out until dry and the obtained crystals are dissolved in water until 35-85% content of dry substance. As a result, syrup containing 25-90% fructose to the mass of dry substance is obtained from the liquid fraction. The invention increases yield of syrup concentrated with fructose and increases relative content of fructose in it.
EFFECT: increased yield of syrup concentrated with fructose and increased relative content of fructose in it.
