FIELD: food industry.
SUBSTANCE: invention relates to method of manufacturing beverage or liquid food products of capsule. The capsule contains product with extractable substance. The capsule has flexible membrane. The membrane has a serious ability in elastic or permanent distortion. Method includes piercing of many holes on the whole surface of membrane and injection the water on the surface of flexible membrane in such a manner that it is deformed in the direction of product, which is inside the capsule. Water gets inside the capsule through mentioned holes. Size of holes, pierced by perforating pins is defined by the level till which the capsule is filled, or by the compaction of product inside the capsule. As a consequence of this, corresponding influence on difference of hydraulic pressures, making effect on the flexible membrane from both sides is performed. Thus automatic regulation of product shrinkage degree is performed.
EFFECT: possibility to increase beverage taste characteristics and microstructure of cooked beverage or liquid food product.
