FIELD: beverage making.

SUBSTANCE: group of inventions relates to a beverage extraction unit, a beverage making device, the use of a replaceable capsule, and a beverage making system. A beverage extraction unit is proposed for the extraction of a beverage from a replaceable capsule containing ingredients of the beverage, having a wall for introduction of liquid and membrane of an outlet for the beverage. The capsule additionally has an annular edge, relatively to which or on which membrane of the outlet for the beverage is hermetically attached. The beverage extraction unit contains a frame, an injection part for accommodation of the wall for introduction of liquid into the capsule containing at least a water supply nozzle for injecting water into the capsule, and an extraction part located with the possibility of closing together with the injection part with formation of an extraction chamber. The extraction part is closed with the injection part at the specified edge. The extraction part contains an extraction plate having outlets for release of a liquid beverage extract, and a set of relief elements made with the possibility of creation of holes of the first type in membrane of the outlet due to pressing of membrane of the outlet to relief elements under pressure of water supplied to the extraction chamber. The extraction part additionally contains a set of piercing elements made with the possibility of creation of holes of the second type in membrane of the outlet for the beverage. Piercing elements are arranged with the possibility of movement relatively to the extraction plate and through it between: an extended or expanded position, in which piercing elements pass towards the injection part, beyond relief elements of the extraction plate for creation of holes of the second type in membrane of the outlet of the capsule enclosed in the extraction chamber, and a retracted position, in which piercing elements are removed in such a way relatively to their extended position that relief elements pass towards the injection part, beyond piercing elements or at least to a level of piercing elements. In addition, such an extraction unit is made with the possibility of use of piercing elements in one or more modes selected from: a mode of holding piercing elements in a stationary state from the beginning to the end of extraction of the specified ingredient in such a capsule in the extraction chamber, piercing elements are moved inside the extraction chamber or out of the extraction chamber before the extraction of the specified ingredient or are held outside with the possibility of prevention of impact of piercing elements on such a capsule until the end of extraction, a mode of moving piercing elements inside and outside of the extraction chamber before the extraction of the specified ingredient in such a capsule, when such a capsule is in the extraction chamber, and a mode of holding piercing elements outside the extraction chamber at the beginning of extraction of the specified ingredient in such a capsule, and then moving piercing elements inside and then moving them outside of the extraction chamber. In the specified modes, the ingredient is pre-moistened, and the beverage does not flow out at the beginning of extraction.
