FIELD: chemistry; food products.
SUBSTANCE: method provides for grain steeping oats in water with a pH 3.0 under the correlation of the components 1:3 for a period of 60 minutes at a temperature of 40°C with subsequent washing, processing cellulolytic enzymatic agent "БИОБЕЙК-721" (manase, xylanase, cellobiase, exo-p-1,4-glucosidase) in the amount 0.1-0.2% to the mass of grain with the hydromodulus 1:3, temperature 40-45°C, pH 4.5-5.0 for a period of 30-60 minutes for the hydrolysis of the cell walls of the grain. After processing the grain is washed and dispersed to the degree of crushing not more than 300 micron, its dried and dispersed to the level of crushing of not more than 200 microns. Crushed grain is processed by the amylolytic enzymatic agent BAN 480 L (α-1,4-glucan-4-glucanhydrolase), possessing an amylolytic activity 4000 U/g in the quantity 0.02-0.03% to the mass of grain under the hydromodulus 1:3, temperature 85-90°C and pH 4.5-5.0 for 50-60 minutes with subsequent inactivation. Saccharification of the liquefied mass is carried out with enzymatic agent SAN EXTRA L (α-1,4-glucan-4-glucanhydrolase) in the amount 0.06-0.08% to the mass of grain, possessing amylolytic activity 550 U/ml and glucoamylase activity 7500 U/ml, process is carried out under the hydromodulus 1:3, temperature 55-60°C, pH 4.5-5.0 fro 40-60 minutes.
EFFECT: process acceleration of producing a sugar-containing product, increasing its nutritional value, fortification of mono and disaccharides, proteins, food fibres, vitamins and mineral substances.
