FIELD: biotechnology; food industry.
SUBSTANCE: soaked cereal raw materials are divided into four fractions: starch (starch A), grain shells fraction (pulp), starch-protein (starch B) and extract. Starch B and extract are joined. Protein solution is allocated using cellulolytic and amylase enzymes at the rate of 50–170 units of cellulolytic activity, then xylanase and glucoamylase action at the rate of 50–70 units of xylanase and 2–4 units of glucoamylase activity, then proteolytic action at the rate of 0.4–0.6 units of proteolytic activity. Processing time of enzyme preparations in the first stage is 3–4 hours at a temperature of 50–60 °C, hydronic modules 19–1 to 25–1, pH value 5–6; in the second stage - 3–4 hours at a temperature of 55–60 °C, hydronic modules 19–1 to 25–1, pH value 4.3–5.0; on the third - 1.5–2.5 hours at a temperature of 50–60 °C, hydromodules 12–1 to 14–1, pH 3–3.5. Protein solution is concentrated. Enzymatic aggregation and precipitation of proteins is carried out. Neutralization with an alkaline solution at pH 10–11 and a water ratio of 12–1 to 14–1, at a temperature of 50–55 °C for 1–2 hours is performed. Rinsing is carried out.
EFFECT: invention allows to obtain a product with a protein yield after precipitation of 80_2–84 %.
