FIELD: processing of raw cereal material.
SUBSTANCE: method involves activating water in rotor-pulsation unit during 5-15 min; preparing suspension of basic material, providing thinning and enzymic hydrolysis of starch in the same unit, with thinning process being performed at temperature of 50-70 C and hydrolysis process being performed at temperature of 55-67 C until predetermined hydrocarbon composition is reached and ready product is obtained. Raw cereal material includes wheat flour, wheat grits, rye grain, rye flour, and rye grits. Depending on kind of basic material, respective enzyme preparations having desired activity: amylosubtilin, glucavamorin, multienzymic composition containing said enzymes, and celloviridine, are used.
EFFECT: simplified and intensified process, reduced consumption of enzyme preparations and decreased consumption of power for process.
