FIELD: food industry.
SUBSTANCE: bold barley grains are soaked in water with pH = 3.0, the ratio of components being 1:3 during 60 minutes at temperature 40°C, washed with water, hydrolysed with Fungamyl BG cellulitic enzyme preparation in an amount of 0.1-0.2% to grain weight with hydromodulus 1:3, temperature 40-45°C, pH = 4.5-5.0 during 30-60 minutes for hydrolysis of grain cell walls; the grains are repeatedly washed, dispergated till crushing grade of not more than 300 mcm, dried; the grains are treated with Termamil 2X amylolytic enzyme preparation, its amylolytic activity 4000 unit/g in an amount of 0.02-0.03% to grain weight with hydromodulus 1:3, temperature 85-90°C and pH = 4.5-5.0 during 50-60 minutes with further inactivation; the dissolved mass is saccharified with Glucaquamorin G 18 X amylolytic enzyme preparation in an amount of 0.06-0.08% to grain weight, its amylolytic activity 550 unit/g and glucoamylolytic activity 7500 unit/ml with hydromodulus = 1:3, temperature 55-60°C, pH = 4.5-5.0 during 40-60 minutes.
EFFECT: invention allows to accelerate the process of the sugar-containing product production due to reduction of time at the stage of saccharification and to increase its nutritional value due to whole barley grains (with a rich chemical composition) being used as the initial raw material.
