FIELD: food industry.

SUBSTANCE: invention relates to dairy industry and can be used for production of ice-cream bars with sticks inserted. Generator of stick ice-cream bars contains roundabout, set with possibility of horizontal motion furnished with molds, brine vat for ice-cream freezing and for its surface defrosting, mixture batcher, device for sticks insertion, device for ice-cream bars removal and glazing, dryer and molds-washing device, device for supply and withdrawal of heat-transfer liquid and coolant, remote conveyor for connection with wrapping machine. Brine vat is represented by insulated basket as a ring with solid bottom and side ring walls. It is fixed under the roundabout and divided by partitions into compartitions, which have openings for coolant supply in upper part. In every compartition there is one radial raw of molds. During the working mode molds filled with measured portion of ice-cream move intermittently in a circumferential direction and sequentially go through zones of freezing and surface defrosting. Compartitions are provided with feeding branch with special valve for withdrawal of coolant.

EFFECT: invention provides increased quality of ice-cream, decreased waste of coolant, decreased energy demands and increased reliability.
