FIELD: milk industry, in particular, equipment for producing of ice-cream in the form of briquettes with sticks inserted therein, namely, choc-ice.
SUBSTANCE: choc-ice generator with recoverable heat-and-mass exchange system has horizontal rotating turret-type installation with ice-cream forms, box mounted under turret-type installation, ice-cream freezing and unfreezing device including coolant supply and discharge pipes, and unit for causing coolant to circulate in choc-ice generator system, and also mixture dosing device, stick inserting device and device for withdrawal and glazing of frozen ice-cream briquettes. Ice-cream forms are equipped with jackets connected to pipes for supplying and discharge of hot and cold coolants. Spiral-shaped guides may be disposed within ice-cream form jackets. Utilization of forms equipped with jackets connected to pipes for supplying and discharge of hot and cold coolant, such as Freon, allows heat-exchanging process to be intensified, and utilization of spiral-shaped guides in said jackets provides for uniform cooling and optimal usage of coolant.
EFFECT: increased efficiency, reduced production costs, decreased power consumption, enhanced reliability in operation, and prolonged service life of choc-ice generator.
