SUBSTANCE: invention is related to the production technology of meat and vegetable preserved food. The proposed preserve preparation method includes the following operations. The recipe components are prepared according to traditional technology. Prepared onion is cut and browned in melted fat. Millet is boiled till 150% increase of weight. Rabbit meat is chopped. The listed components are mixed with drinking water and table salt to obtain cutlet mass. Cutlet mass is formed, coated with wheat white breadcrumbs and fried in melted fat to make sichenik. Prepared apples are cut and fried in melted fat. Prepared tomatoes are cut and blanched. Pre-processed carrots are blanched and cut. Pre-processed fresh green peas are frozen, preferably - at a slow rate. Wheat flour is sautéed in melted fat. The above-mentioned ingredients are mixed with sugar and culinary salt under oxygen-free conditions to produce the garnish. Sicheniks, garnish and melted fat are packaged, vacuum-sealed and sterilised which finally yields the target finished product.
EFFECT: invention allows to increase digestibility of culinary dish.
