FIELD: food industry.
SUBSTANCE: invention is related to food industry, in particular, to production of bakery products. Wheat flour based dough with weak or good gluten is kneaded. Animal protein "Scanpro BR95" and\or "Scanpro Super" is added in quantity 0.5-1.7% of flour weight. Mentioned protein is added as mixture with wheat flour.
EFFECT: as a result, structural and mechanical properties of dough increase.
