SUBSTANCE: invention concerns food-processing industry and can be used at manufacture of semi-finished fish foods. The method involves mixing minced fresh-water fish with non-fish saw material of animal origin followed by freezing. The non-fish saw material of animal origin is represented by Scanpro 1015/SF animal protein in an amount of 0.6 - 1.6% of the weight of fish raw material in dry hydrated condition and as part of protein-and-fat emulsion.

EFFECT: invention enables improvement of structural and mechanical properties of the product.
